Banica
If you ever go to Bulgaria don't forget to try the "banica" (Ба̀ница). It is made of Bulgarian cheese, eggs, and a special wheat dough that can only be found in Bulgaria. People usually have banica for breakfast but it can be also eaten as a dessert.
On New Year's Eve all Bulgarian people eat the banica,
this is the tradition. They also put little pieces of paper in the banica that
are called "kusmetcheta", a sort of lucky quotes such as
"love", "health", "money", "travel"...
The Bulgarian yoghurt and cheese
Bulgaria is also very famous for its
special and unique yoghurt called "кисело мляко" in Bulgarian. Bulgarian yoghurt is never sterilized
after fermentation that's why it has a different taste from the other yoghurts
you can find in Europe. It is the only kind of yoghurt sold in the
supermarkets, you can hardly find anything else. The "кисело мляко" is used in many recipes that's why Bulgarian meals
have an authentic taste. This yoghurt is also an ingredient found in the "banitsa".
Our cheese is also very special and it
can be found only in Bulgaria. In France there are over 500 types of cheese but
you can't find the bulgarian one. It is white and very salty. It looks a bit
like feta but its texture is grainier and it's saltier. We basicaly put
cheese everywhere, there are hundreds of cheese-based recipes. Here is one with
tea : it is very simple, you put together cheese, hot chamomilla tea, bread and
a lot of sugar. It doesn't sound very tasty but it's a traditional breakfast.
Rakiq
Even if you don't drink alcohol, it would be very
sad to miss out on this great spirit! There are different types
of rakiq. This alcohol can be made with grape, plums, pears, apples.. however
the best one remains the plum rakiq. Although this spirit is very strong, 70%
most of the time, Bulgarian people never mix it with any soft drink.
